Our Silver Needle Tea is 100% Organic and is grown in the Fujian Provence, China. The Chinese Name is Baihao Yinzhen. Silver Needle or ‘White Hair’ tea is highly coveted and one of the most expensive to buy. It contains less caffeine and higher antioxidants than black, green or oolong teas. The best water temperature for brewing our Silver Needle Tea is between 80–90 degrees Celsius. This will produce a glittering light golden brew with a delicate, sweet aroma and a fresh, light aftertaste. The leaves stand upright in the water and some tiny silver hairs float, reflecting the light upon brewing. Use 1 heaped teaspoon of leaves for every 200 ml and depending on personal taste the tea can be steeped for up to 5 minutes however we find 2 – 3 minutes at 85 degrees is best. Silver Needle buds are plucked by artisans just before they fully open when the buds are covered with a fine white hair and then allowed to wilt under the sun in shallow baskets.
